Abstract

Keberlangsungan hidup manusia selalu berhubungan dengan kebutuhan pangan. Seiring berkembangnya waktu, sektor pangan menjadi terganggu dengan kebutuhan manusia lainnya. Permintaan kualitas dan kuantitas pangan yang meningkat menuntut sektor produksi untuk bekerja lebih keras dari kemampuannya. Jika pemenuhan pangan tidak seimbang dengan permintaan, memungkinkan terjadinya krisis pangan. Kedelai adalah komoditas pangan yang memenuhi kebutuhan protein nabati kita sehari – hari, seperti tahu, tempe, kecap dan susu kedelai. Bahan makanan yang berasal dari tumbuhan sebagai subtitusi makanan yang berasal dari hewan. Produksi kedelai semakin mengalami hambatan akibat minimnya lahan produktif serta beberapa faktor lainnya seperti cuaca serta bibit yang sehat. Lahan adalah masalah terbesar akibat alih fungsi lahan menjadi lahan industri (pabrik). Terdapat jarak antara petani kedelai, pengrajin tempe dan masyarakat sebagai konsumen mengenai kualitas dan kuantitas serta permintaan dan pemenuhan dalam pasar. Masing – masingnya memiliki keluhan atas apa yang diperoleh. Konsumen belum tentu paham atas apa yang terjadi selama proses penanaman hingga pasca panen di kebun, kemudian proses pengolahan menjadi bahan makan setengah jadi seperti tahu, tempe dan susu kedelai serta proses distribusi. Petani juga tidak paham apa yang terjadi dari proses distribusi hingga ke tangan konsumen dan pengrajin atau pengolah kedelai juga tidak paham tentang apa yang terjadi dalam proses di kebun hingga ke konsumen. Penelitian ini akan mengaplikasikan konsep kebun gizi mandiri dalam perancangan community center untuk mendorong kualitas dan kuantitas produksi kedelai. Terlebih untuk meminimalisir ketergantungan produksi kedelai baik dalam sektor perkebunan maupun pengolahan dalam ketergantungan lahan serta program pemerintah yang tidak realistis dengan kebutuhan pangan nasional dari sektor kedelai. Penelitian ini bertujuan untuk menciptakan panduan bagi produsen kedelai untuk berkebun secara mandiri dan komunal dengan memanfaatkan lahan yang tersedia tanpa harus membuka atau membeli lahan baru. / Human survival is always related to food needs. Over time, the food sector has become disturbed by other human needs. The increasing demand for quality and quantity of food demands the production sector to work harder than it can. If the compliance of food is not in balance with the demand, it will cause a food crisis. Soybean is a food commodity that meets our daily vegetable protein needs, for example in the form of tofu, tempeh, soy sauce and soy milk. Also, today it is one of the basic ingredients of food derived from plants as a substitute for basic food ingredients derived from animals. Soybean production is currently experiencing obstacles due to the lack of productive land and several other factors, such as weather and healthy seeds. Land is the biggest problem due to the conversion of land into industrial land (factories). There is a distance between soybean farmers, tempeh craftsmen and the community as consumers regarding quality and quantity as well as demand and compliance in the market. Each of them has complaints about what is obtained. Consumers do not necessarily understand what happens during the planting process to post harvest in the garden, then the processing into semi-finished food items such as tofu, tempeh and soy milk as well as the distribution process. Farmers also do not necessarily understand what happens from the distribution process to the hands of consumers and the craftsmen or soybean processors also do not necessarily understand what happens in the process in the garden and what consumers receive. This research will apply the independent nutrition garden concept in designing a community center to encourage the quality and quantity of soybean production. Especially to minimize dependence on soybean production both in the plantation and processing sectors in terms of land dependence and government programs that are not realistic with national food needs from the soybean sector. This study aims to create a guide for soybean producers to garden independently and communally by utilizing the available land without having to open or buy new land.
